The ingredients needed to prepare Tomato, Chilli and Red Onion Chutney:
- Get 750 g cherry tomatoes, halved
- Get 2 red onions, diced
- Prepare 2 cloves garlic, crushed
- Prepare 1/4 teaspoon chilli flakes
- Use 1 teaspoon ginger powder
- Provide 2 teaspoons ground cumin
- Take 2 teaspoons ground coriander
- Take 250 ml white wine vinegar
- Take 300 g soft light brown sugar
- Take 2 teaspoons gluten free soy sauce

- Place the onion, tomatoes, garlic, chilli, ginger, cumin and coriander in a pan - Add the white wine vinegar and sugar - Cook on a low heat stirring until the sugar has dissolved
- Bring to the boil then reduce the heat until it is simmering gently - Cook until the mixture reduces to a jammy consistency - Stir in the soy sauce and cook for a further couple of minutes
- Spoon into a sterilised jar and seal - This will keep in the cupboard for months and up to 1 month in the fridge once opened

Grind the above ingredients along with garlic and salt (add tamarind paste while grinding) into a fine paste.
