- Prepare 2 servings Udon Noodles
- Prepare Toppings of your choice *Today I added Tempura and Spring Onion
- Get Shichimi (Japanese Chilli Spice Mix)
- Provide <Soup>
- Use 2 cups Dashi Stock *OR 2 cups Water & 1 heaped teaspoon Dashi Powder
- Take 2 tablespoons Sake (Rice Wine)
- Take 1/2 teaspoon Salt
- Use 1 tablespoon Soy Sauce *OR as required
- Get 1/2 tablespoon Mirin
Steps to make Udon in Soup:
- Place Dashi Stock, Salt, Soy Sauce, Mirin into a saucepan and bring to the boil. *Note: ’Usukuchi’ lighter colour Soy Sauce, that is saltier, is ideal. If you use the ordinary Soy Sauce, you might need extra Salt.
- Cook Udon Noodles as instructed. DO NOT add salt into the water. The best Udon Noodles are the frozen type that you can find at Asian grocery stores. The frozen Udon Noodles are already cooked, so just warm them in the boiling water.
- Noodles are served in hot soup with toppings such as Tempura, Kakiage Tempura or ‘Abura-age’ cooked just like ‘Inari-zushi’ wrappers, Spring Onion, Wakame, Surimi (paste made from fish) products. *Please find my recipes for those.
Gather the ingredients for the broth and the noodles - soy sauce, fish sauce, rice vinegar, chicken broth and udon noodles. Cook udon noodles according to packet directions, or recipe if you're making them by hand. Place dashi, soy sauce, mirin, salt and sugar into a deep bowl, then pour boiling water over the top. Take cooked udon noodles and slide into the soup base. Top with sliced spring onion, bonito and chilli flakes.
